Carmel Mountains

NEGEV DESERT: SDE BOKER

At 500 meters elevation, this region has 1000 years of historical grape growing and wine making heritage; sophisticated irrigation technonlogy and monitoring; extreme sandy soil; yields deliberately kept low to minimize water usage and attain highest quality grapes; hot arid days and cool windy nights produce small and thick skinned berries, with deep colors and extraordinary flavor intensity.

Grape Varieties: Merlot, Cabernet Sauvignon

CARMEL MOUNTAIN: ZICHRON YAAKOV

Selected over 100 years ago by Baron Edmund de Rothchild, Tishbi's home vineyards are located at the foot of the Carmel mountain range, with Mediterranean Sea breezes coming from the West: soil and sub soil vary from red and black alluvial to white limestone-based soil.

Grape Varieties:Merlot, Emerald Riesling, French Colombard, Petite Sirah

UPPER GALILEE: KFAR YUVAL & KEREM BEN ZIMRA

Close to the Lebanese border at 500 to 700 meters elevation, this is perhaps the best terroir in Israel; the virgin red soil of the ancient Hula Lake is well drained and studded with smooth pebbles, making it airy, yet rich; high elevations and hillside day/night temperatures allow good polyphonolic maturation; southerly aspect's dry winds protect against diseases; grapes allowed to ripen in vines for late season harvest.

Grape varieties:Cabernet Sauvignon and Melot used for "Reserve" and "Estate" wines.

LOWER GALILEE: KFAR TAVOR

Hillside vineyards at the foot of Mount Tavor, overlooking the Sea of Galilee; dry area with important daily temperature variations, resulting in high s ugar content, deep color, full tannins and early ripening; limestone based soil at 400 meters elevation.

Grape varieties: Sauvignon Blanc, French Colombard, Cabernet Sauvignon and Merlot

JUDEAN HILLS: GUSH ETZION

600 to 900 meters elevation hillside vineyards in the Jedean Hills south of Jerusalem; limestone and chalk sub soil; dry and breezy climate with "coool" winters; westerly facing open areas; afternoon mountain winds allow late harvest in mid-to-late October; surrouning vegetation lends flavors of eucalyptus, menthol and herbs.

Grape Varieties: Cabernet Sauvignon, Merlot
