Jego próby z różnymi gronami i jego sukces właśnie z Pinot Noir charakteryzują Boucharda Finlaysona. Peter nie idzie na kompromisy. "Pinot Noir jest jak opera - mówi. - Kiedy jest wspaniałe, zabójczo uwodzi. Nie ma drogi pomiędzy". Chłodny klimat z oceanicznymi wpływami w dolinie pozwala Peterowi wytwarzać klasyczne wino Pinot Noir. Hermanus is famous for the Whales that venture into their waters, Shark cage diving is another great attraction for the brave and courageous.
